Peanut Butter Fingersdesserts

Ingredients

  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1/2 cup oil
  • 1/2 cup applesauce
  • 2 1/2 tsp. vanilla
  • 1 1/2 cup rolled oats
  • 1 1/2 cup flour
  • 3/4 tsp. baking soda
  • 1 cup peanut butter
  • chocolate frosting

Directions

Preheat to 350. Cream oil and vegan sugars. Add applesauce and vanilla and mix well. Add oatmeal, flour and soda; mix well. Press entire cookie dough into lightly greased cookie sheet. (I use my fingers--sprayed w/ "Pam" to spread the batter or I use the back of a spoon) Bake at 350 for 15 minutes, just until lightly brown. Take out of oven and drop pan on cupboard (this settles the dough) but DON'T TURN PAN OVER AND DUMP OUT! Spread top with peanut butter and cool (about 1 hour). Spread with chocolate frosting.
