LA Style Pancakes
Ingredients
- 1/2 Tbsp cinnamon
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup ground flax seed
- 1/2 cup oats
- 1 1/2 cups flour
- 2/3 cup blueberries
- 2 cups soy milk or rice milk
Directions
These are the simplest pancakes. For pancakes the ratio of liquid to dry ingredients should be roughly 1:1. Instead of having the full 2 cups of flour for this recipe, I substitute oats and flax seed for a half cup flour to add texture and nutrition.
Combine all the dry ingredients in a large bowl and mix well. Add the milk and blueberries (or other fruit of your choice) and whisk until JUST mixed. Do NOT over mix because you will destroy the leavening process and render the pancakes dense and not fluffy.
Heat a skillet with oil or margarine to approx. 350 degress F. Scoop on the pancake batter. Cook on one side until the edges are cooked then flip. When you can press the center of the pancake down and it fluffs back, they are ready to eat.
To serve LA Style: spread on smooth peanut butter, top with chocolate chips and pure maple syrup. Eat.
