Lentils with Veggies
Ingredients
- 1 cup brown lentils
- 1 large yellow onion, diced
- 2 carrots, diced
- 4 cloves garlic, minced
- 2 Tbsp. fresh ginger, grated
- 1/4 cup peanut oil
- 10 plum tomatoes, chopped
- 1/2 cup tomato paste
- 1 cup vegetable broth
- 1 cup frozen green peas
- 2 tsp. cumin
- 2 tsp. hungarian paprika
- 1 tsp. fenugreek
- 1/2 tsp. dried thyme
- 1/4 tsp. ground coriander
- 1/8 tsp ground allspice
Directions
In a large pot, over medium heat saute the onions and carrots for 10 minutes. Add the garlic, ginger and spice blend. Saute 5 more minutes. Add the chopped tomatoes, cook 5 more minutes. Add tomato paste and mix, then add the water. Simmer Until bubbling. Add the cooked lentils and green peas, simmer 15 more minutes. Serve over rice.
(Also, I didn't have all the spices and it still turned out great, so don't worry i didn't have the fenugreek or carmodon, and i just used extra papricka, thyme and allspice.)
