Slacker Balls
Ingredients
- 1/2 cup unsweetened cocoa powder
- 1 1/2 cup sugar
- 1/2 cup soymilk
- 3/4 cup peanut butter
- 2 1/2 cups dry oatmeal
- 1 tsp. salt
- 1 12oz bag chocolate chips
Directions
Combine oatmeal and peanut butter in a bowl and mix well. In a saucepan over medium high heat add chocolate, sugar, salt and soymilk and bring to a boil for a minute or until sugar is dissolved. Pour hot liquid over oatmeal mixture and mix and then let cool. Roll mixture into 1 inch balls and place on a greased cookie sheet. Place in freezer.
Next, double-boil the chocolate chips. Make sure the heat is low as to not burn the chocolate. While the chips are melting add a little extra soymilk or vegetable oil to give it a smoother consistency. Remove the balls from the freezer and using two forks roll the balls in the melted chocolate and return to cookie sheet. Put back in the frig until the chocolate is sufficiently hardened (usually an hour).
