Potato Partyentrees

Ingredients

  • 4-5 good sized Russet or Yukon Gold Potatoes
  • Veganrella Cheese
  • 1 cup Soy Milk
  • 3 TB Vegan Butter
  • Spike Seasoning (or just salt & pepper)
  • 4-5 Cups water

Directions


1. Preheat oven to 350°.
2. Wash & peel potatos. Slice them thinly and set aside.
3. In large saucepan, melt the butter and then add in the soy milk on medium/high heat. Boil this for 5 minutes while stirring. Pour into a large cassarole dish.
4. In large pot, water to a boil and immerse potatoes. Cook for 5 minutes then drain.
5. Mix the cheese and potatos together and then add to casserole. Add seasonings
6. Bake for 30-45 minutes and enjoy.
Serves three.

**Notes
–Make sure to put a decent layer of cheese on top of the potatoes as well as layered inside.
—Given the consistency of vegan cheeses, it's hard to grate so your best bet is just to slice it thinly.
–Sauce will thicken during baking.
–This is a very straight forward dish, you can add virtually any vegetables and/or spices. Try zucchini and crushed garlic.
