Vegan/Gluten Free rice salad
Ingredients
- 2 boxes of Near East long grain wild rice (orignial)
- 1/2 cup olive oil
- 1/4 cup honey
- 1/2 cup red wine vinegar
- 2 cloves of crushed garlic
- 1 bunch of scalions (green onions) sliced
- 1 1/2 cups of red grapes quartered
- pepper
- almonds
Directions
Cook rice according to the box and set aside to cool
Combine olive oil, honey, red wine vinegar, and garlic in a bowl
Once rice it cool, combine rice and dressing, stir well (you may not need all the dressing- check rice for moistness)
Stir in grapes and scalions
Add almonds and pepper to your liking
Serve cold or at room temperature
Serves 12 people (or a lot of leftovers)
