Vegan/Gluten Free rice saladsalads

Ingredients

  • 2 boxes of Near East long grain wild rice (orignial)
  • 1/2 cup olive oil
  • 1/4 cup honey
  • 1/2 cup red wine vinegar
  • 2 cloves of crushed garlic
  • 1 bunch of scalions (green onions) sliced
  • 1 1/2 cups of red grapes quartered
  • pepper
  • almonds

Directions

Cook rice according to the box and set aside to cool
Combine olive oil, honey, red wine vinegar, and garlic in a bowl
Once rice it cool, combine rice and dressing, stir well (you may not need all the dressing- check rice for moistness)
Stir in grapes and scalions
Add almonds and pepper to your liking

Serve cold or at room temperature

Serves 12 people (or a lot of leftovers)
