Pumpkin Pie
Ingredients
- 2 cups pumpkin
- 1 cup soymilk
- 3/4 cup brown sugar (or 1/2 cup honey)
- 1 Tbsp. molasses
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. powdered ginger
- 1/4 tsp. ground cloves
- 1 tsp. cinnamon
- 3 Tbsp. oil
- 1/4 cup cornstarch (or tofu)
- 6 Tbsp. margarine
- 1 1/2 cup whole wheat pastry flour
- 4 Tbsp. soy milk (approx)
Directions
Start by making the crust. Preheat the oven to 425F. Combine 6 T.margarine and 1 1/2 cup flour in food processor till it resembles coarse cornmeal. Add enough soymilk to hold together just till it starts to stick but isn't sticky. Roll dough out into a round shape to fit pie pan. Cook crust for 10 minutes. Then, TURN HEAT DOWN to 350F. Combine all other ingredients for pie filling. Cook for 40-50 minutes until middle is set (starts to crack).
