Jason's Yummy Red Lentilssoupsstews

Ingredients

  • 1 bay leaf
  • 1 tsp. cumin seeds
  • 1 tsp. salt
  • 2 tsp. coriander powder
  • 1/2 tsp. chili powder
  • 4 1/2 cups water
  • 1 1/2 cup red lentils
  • 2 large potatoes, chopped
  • 1/2 bag of spinach
  • 2 Tbsp. olive oil

Directions

Heat olive oil on low heat in a pot. Saute whole cumin seeds and bay leaf until seeds brown a bit. Pour in red lentils and water adding chili powder, coriander and salt; bring to a boil. Add chopped potatoes. Simmer until lentils are falling apart and potatoes are cooked through. Put spinach in a couple minutes before done and cook until wilted.
