Cornmeal Blueberry Pancakesbreakfast

Ingredients

  • 1 cup soymilk
  • 1/2 cup water
  • 1 cup whole wheat flour
  • 1/2 cup ground cornmeal
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup frozen or fresh blueberries

Directions

Put the soymilk and water into a bowl and mix. Whisk in flour, cornmeal, baking powder,and baking soda, and salt.Do not overmix. Fold in the blueberries.Let batter sit for 5 min to thicken. Pour pancakes into non stick pan. Make sure pancakes are cooked evenly before flipping. Serve immediately with chunky fruit sauce, maple syrup, or fresh fruit.

Serves: 9 4" Pancakes
