Vegan Stuffed Shellsentrees

Ingredients

  • 1 block extra firm tofu, drained and pressed
  • 1 package vegan rella (or tofutti mozerella singles)
  • 1 package herb toffuti cream cheese
  • 1 large carrot, shredded
  • 1 medium zucchini, shredded
  • 1/2 10oz package spinach, steamed and pressed out as much water as possible
  • 2 clove garlic, minced
  • 1/8 cup vegan parmesan (optional)
  • fresh herbs such as parsley or basil (optional)
  • Box of jumbo stuffing shells

Directions

Mix together all ingredients in a large bowl. Stuff into pre-boiled Large Jumbo Stuffing Shells. I just follow the directions on the box for regular stuffed shells (e.g. 350 degrees for 30 minutes, cover with foil, in a large pan with tomato sauce on the bottom). That's it!
