Tahini Rotini with Broccoli and Lemon
Ingredients
- 1/2 cup tahini
- 2 Tbsp. soy sauce (or Braggs)
- 1/8 tsp. cayanne pepper
- 15 oz can of chickpeas (rinsed and drained)
- juice of 1 lemon
- 1 lb wheat rotini pasta
- 2-3 cups of broccoli
- 1 cup vegetable broth
- 1/4 cup toasted sesame seeds
- lemon zest
Directions
Put tahini, soy sauce, cayanne, lemon and chickpeas in a food processor until smooth. Put into a medium sized saucepan on simmer, add warm vegetable broth. Put pasta and broccoli in a shallow serving platter, pour sauce over and top with sesame seeds and lemon zest.
